Best Ever Potato Soup February 2, 2012

I had the day off and was in the mood for homemade potato soup.  I figured that my husband, Ryan, would appreciate soup for dinner since he’s been sick the past few days.  The recipe for the Best Ever Potato Soup is from Nancy Roberts (pg. 223 in the Cable Family Cookbook).  Delicious!

6 bacon strips, diced

3 c. cubed, peeled potatoes

1 can chicken broth

1 small carrot, grated

½ c. chopped onion

1 T. dried parsley flakes

½ tsp. celery seed

½ tsp. salt

½ tsp. pepper

3 T. flour

3 c. milk

8 oz. Velveeta cheese, cubed

2 green onions, thinly sliced

Fry bacon until crisp.  Add potatoes, broth, carrot, onion, parsley, celery seed, salt, and pepper.  Cover and simmer until potatoes are tender, for about 15 minutes.  Combine flour and milk until smooth.  Add to soup.  Bring to a boil, boil and stir for 2 minutes.  Add cheese; stir until cheese is melted and soup is heated through.  Garnish with green onions.
